1、选购五花肉时,以肥瘦层叠相间的为最佳,不宜选皮下脂肪太厚的,否则成菜吃起来会过于油腻,难以入口。

2、五花肉切块后,要先下锅煸出油,倒出锅内余油后,才倒入红茶汤同煮,此法可使五花肉煮熟后不会有肥腻感。

3、除了用红茶包外,还可用铁观音、乌龙茶、普洱的茶汤来烧菜,由于茶叶吃起来苦涩味较重,口感较差,因此取茶汤便可,茶叶应弃之。E#Y!rgg"J
