糖醋脆皮鱼(过程图)[12P]
这道菜大概有十年都没做过了,呵呵。今天周末就在家试着做一次,恩~过程还算记得清楚。下面直接上图吧。

主料:鲤鱼一条(大概1斤)

调料:白醋、糖、料酒、番茄沙司或着番茄酱、盐、味精、水淀粉

1、将鱼洗净撒干水分,在鱼头下部切一刀、鱼尾部同样,抽出鱼腥线。

2、鱼身改刀,切瓦块片。从鱼肉最厚的背鳍下刀,尽量不要切到鱼肚子,不然过油炸制的时候容易断开。

3、鱼身撒少许盐、料酒,腌渍20分钟。然后用鸡蛋一只、水淀粉、面粉适量,调成糊。使鱼身全部沾满芡糊,然后在扑一层干粉。z;Tgf\H1])h@8^J

4、锅内放油,要以没过鱼身为准。烧至6成热,手提鱼尾,用炒勺将油淋至鱼身,等外皮基本定性后,再将鱼放入锅内炸至熟捞出。开大火等油温升高后复炸一下,装盘备用。

5、将调料白醋、糖、料酒、盐、味精,加温水调匀成甜酸汁。锅内留底油烧热,导入甜酸汁,加番茄沙司炒匀后,加水淀粉勾芡,把炸制好的鲤鱼回锅挂汁,淋明油出锅装盘既可。^t/Z*~'dU;\,d

炸鱼就是太费油,看照片,锅里估计要1斤多油吧!L N7HP@C
糖醋味道比较喜欢,就是汁调的麻烦点!
