做法:将虾洗净,荷叶亦洗净泡温水变软,将虾放于荷叶上略微摊开,淋上生油,绍酒,葱段,姜,包好置于盘内加盖大火水滚,隔水高火蒸7分钟即可.

豆醬蒸魚

材料:鯧魚一条,豆醬四茶匙,细姜絲三分一碗,细葱絲四分一碗,料酒二匙,味精与酱油各一点.

制作:用盐将魚微醃去腥,十分钟後冲洗乾淨抹干水.放料酒,豆酱,味精抹匀魚全身再醃三十分钟.另置一碟,放一半姜絲于碟底,放魚与豆酱醃料于姜絲之上,再放另一半姜絲于魚之上,隔水大火蒸八分钟,熄火不打开蓋.热油锅放三匙油,放葱絲与一点酱油在魚上,再淋热油倒在魚上即可出菜…
